When we heard the news that my brother-in-law had proposed to his girlfriend Fin, and she had said yes we were over the moon for them.  They make a super cute couple and are fantastic together, the news of a wedding was very exciting.

We spoke to them about doing their wedding cake as part of their present and got busy looking at designs and styles.  They chose a simple yet elegant design of 3 tiers sat on an off-set stand, with bouquets of roses and calla lilies sat on top and ribbon round the cake.  Due to the large wedding they were having, this cake was unlikely to provide as much cake as needed for all their guests, so we talked about doing a sheet cake which would be kept out of sight and then cut up when cake was served.  The plan was all set until i decided to step up the sheet…

A little secret for those of you who think Southern California is the land of sunshine – July and it’s sprinkling rain! The beach didn’t even break into the 70s on the 4th, yet we sucked it up and put on bathing suits and shorts and headed to the beach… because that’s how we show our patriotism around here. I lasted until 2, when I decided to go home and prepare a bbq for the family of ribs, pulled pork and scalloped potatoes (because you’ve been starving yourself the past week to look good in a bikini for the holiday, you deserve it) and of course we always end with s’mores during the firework show!

Baptism cakes

The Cake Chick

As promised, these are the latest additions to my Baptism cakes.

The first one was for baby Mateo. Mateo’s mom requested a 2 tier cake, teal blue and white, with Mateo’s name and a cross. This kind of request makes me happy, as it gives me permission to be creative and design as I go. I think this cake combined all of those elements to create an elegant and pretty baptism cake for the cutest little boy. The top tier was marble with chocolate buttercream filling and the bottom was chocolate with vanilla buttercream filling.

The second one was for baby Adele. Adele’s mom requested a two tier marble cake, bright pink, butterflies and daisies and not too religious. This cake combines fondant daisies and sugar to create a cute, girlie cake that can be used for any occasion.

Decadent Cream Cheese Pound Cake

At the request of my dear friend, Eunice, I baked this cream cheese pound cake. I am actually not a huge fan of cream cheese. Sure, I eat some when I have a bagel . . and cheesecake, I know this is crazy talk but I’m actually also not a huge fan. When I get cheesecake, I’ll have a couple bites but then will eat the crust for the most part. Give this home girl chocolate cake any day and you have a friend for life.

I made this cake for my friend because she was so excited to try this recipe. . and to my surprise, I LOVED this cake. Loved it. 

Initially, I wanted to add some chocolate to make a chocolate swirl or something and my friend quickly said No! I’m actually glad she did because the cake was wonderful as is. I will dress this pound/bundt…

Where it all began…

Everyday Me

I’ve always loved baking – although in the beginning it was burnt flour and exploding baked cheesecakes more than anything else. Luckily, I have awesome people in my life that would eat anything I cooked, say it tasted awesome and kept on encouraging me to practice. Over the years my baking skills have improved and I started getting creative with the cakes I made –  cupcakes with a raspberry surprise, marble cakes (such as vanilla and raspberry) and cheesecakes (that didn’t explode). Lately I’ve expanded my baking portfolio to include tarts, cookies and pastries.

I also have a thing for presentation – I’m OBSESSED!! For me, presentation is a really important element of food. It is at the first sight of a dish that you decide whether you’re going to love it or hate it!

It’s definitely my interest in cakes and obsession with presentation that has made me love…

How to make gorgeous Valentine cookies

Cookies are great fun to make – with or without decorations. All you need is a no-fail recipe, a watchful eye and some cute cookie cutters and you’re good to go.

Ingredients
250 grams butter, softened
1½ cups caster sugar
2 eggs
3 cups plain flour
½ cup self raising flour
1 cup dessicated coconut
1 tsp flavouring of your choice (e.g. vanilla or lemon)

Method

  1. Turn your oven on to 160°.
  2. Beat the butter, sugar, eggs and flavouring in a bowl until pale and creamy (probably about 5 minutes if you’re using an electric beater – which you should).
  3. In a separate bowl, sift the flours and add the coconut. Now add it to your wet mixture in 3 to 4 batches. As you add the dry mixture, stir with a spatula. It’s going to feel like the mixture won’t come together…
